If they get too difficult they cease to exist for me - making them so much easier to ignore and does wonders for my blood pressure. Customers are always right, of course, even when they are wrong.

I’m not sure what you mean exactly by "difficult people", but on 2 occasions, I lost patience with people who, as customers, were demeaning, demanding, degrading and generally unpleasant and rude. And suprisingly, in both cases, instead of getting a harsh response from them, what I got was a sudden respect. There are people who take advantage of others and lack respect until you stand up for yourself, after which they will begin to respect you.

Ignore them if you are in a situation where you can.
If they are customers, put up with it. In the end they are your wages and bread-and-butter. It`s just part of the job. Not supposed to be personal.

Hold your head high, stick your nose in the air, and step on them occasionally.

I prefer not to deal with them at all because generally they wouldn’t listen anyway. Usually I deflect them or ignore them with a pleasant blank smile and carry on doing my business without them.

Point out their annoyances as simply and politely as possible. 9 times out of 10 you will have them apologizing. For the 1% that doesn’t, they are too far gone. Here are some examples I have used:
-I am sorry, were you speaking at the same time as me?
-I didn’t understand what you said; I was trying to finish my thought.
-I didn’t hear you. Someone else was speaking first.
-Did you mean to put that there? I don’t think that’s where it belongs.
-Did you realize that you were supposed to be here 20 minutes ago?
-Excuse me, I believe the end of the line is back there.
-WOW!!! (for the 1%)
