Why do some people like to be difficult and
why do some like to make life difficult for others?
There are those who can take the simplest of
tasks and turn them into a disaster.
What’s wrong with finding a simple solution
to a problem without turning it into a challenge?
Challenge is good but it depends on
where it’s being applied.
I one of those that likes to read the instruction
manual, turn on the machine, set it and
forget it. Not take the machine apart
to see what makes it work.
If at ain’t broke don’t fix it.
The first part of the question is a personality ish’. People that tear others positive ideas down with negative ideas attitudes have esteem issues and they want to tear you down to make themselves feel better but it is a short term fix. Over-thinking a simple task can create disaster if you are not well organized. Well organized folks (not like me) do not feel they are over thinking project if it turns out superior than others did.
Part Two
The author of the book Tom Sawyer said "why use a 25 cent word when a ten cent word will do just fine." But finding the shiniest dime in the country may be a challenge worth doing if you have the proper planning and organization.

some are ambitious enough to take up a challenge, others are just lazy. All depends on how one was raised and their personality. I am defintely the type that is always up to being challenged.

I think it’s just the way they are. If they try to make it difficult for others, they must have low self-esteem to make someone feel worse then they themselves do.
Also some people may just want to challege someone else just to prove to themselves and others that they are "better" at something than the other person.

Makes life more interesting.
If people never took the time to think in-depth about things, we’d never have solutions to problems, cures to illnesses… so on and so forth. The simplest of answers, while it would be nice if they were, are not always the true answer.
